Cat's Sweet & Sour Meatloaf (for Tiffany)

I hated meatloaf growing up. I never understood why we just couldn't have hamburgers instead. It was just a bunch of ground beef anyway...

Well thanks to my good friend Cat, my kids are growing up loving meatloaf! This dish is always devoured entirely and there are often fights over who gets the last piece.

8oz can tomato sauce
1/4 C packed brown sugar
1/4 C red wine vinegar
1 t dry mustard
1 egg
half an small onion chopped
1/4 to 1/2 crushed saltine crackers (use as much/little as you like depending on density)
1 t pepper
1 t salt
2 lbs ground beef

Mix first 4 ingredients in a small bowl, and set aside. Beat the egg. Combine the onion, cracker, salt and pepper with the meat. Add the egg and mix together. Add half of the sweet and sour sauce mixture to the meat. Shape the meat into the form of a loaf and set on a foil lined cookie sheet. Pour the remaining sauce over the meatloaf (I make a small indentation down the center of the loaf so the sauce has someplace to stay).

Bake at 375 for 45 minutes.
